Ingredients
5-6 Screwpine Leaves
½ cup of Water
1 cup of Glutinous Rice Flour
2 tbsp of Rice Flour / Plain Flour
¼ tsp of Green Food Coloring
Palm Sugar
Sufficient water for boiling
½ grated Fresh Coconut
Salt to taste
Steps
Blend the screwpine leaves with ½ cup of water to extract the pandan juice.
Strain the juice to remove any solids.
In a mixing bowl, combine glutinous rice flour, rice flour, and a pinch of salt.
Gradually add the pandan juice and mix. Add green food coloring if needed (optional, if using pandan extract, it’s not necessary).
Add water little by little and mix until a dough forms.
Divide the dough into small portions. Flatten each portion in your palm and place a small chunk of palm sugar in the center.
Seal the dough around the sugar to form a smooth ball.
Bring a pot of water to a boil.
Drop the onde onde balls into the boiling water. Once they float to the surface, let them cook for another 1-2 minutes.
Remove the onde onde from the boiling water and roll them in grated fresh coconut while still warm.
Your onde-onde is ready to enjoy! Serve them warm and enjoy the sweet burst of palm sugar inside each ball.
